Drive high into the woodlands of Franklin County over a covered bridge, along a wandering brook and deep into the forest where we will meet up with Janis Steele and Brooks McCutchen.
The Steele-McCutchen’s sustainable family farm produces single-batch maple syrups crafted with solar power. From the forest to the sugarhouse to your taste buds, we will learn how Berkshire Sweet Gold’s unique production methods differ from larger scale productions.
Beginning with a hike up through their 90-acre maple forest we will learn how their collection system brings the syrup to their sugarhouse and how the sap begins to transform from the moment it leaves the tree. Following the lines back to the sugarhouse we will learn how the Berkshire Sweet Gold transforms their sap first through filtration and then evaporation resulting in artisanal single batch syrups.
Brooks will lead us through a tasting of their different syrups, from light to dark, their flavor profiles and the wide range of food pairings that are possible. This is sure to be an experience you won’t soon forget!
